We have recently started to eat more vegetarian meals and follow Meat Free Mondays again. I often lack inspiration with flavours for cooking without meat, but recently borrowed a copy of Ottolenghi’s cookbook, which has some amazing recipes and flavours. Also with vegetables starting to come in from the garden, I feel that I should be taking so much more care with cooking my vegetables after raising them from seed!
My favourite recipes so far have been a mushroom lasagne, spinach cannelloni, and a delicious lime vegetable noodle stir fry. The recipes I choose are based around what we have coming in from the garden and vege box, so there have been quite a few salads lately too.
